Single legume means we do not mix different kind of legumes.
Simple legume means, consuming in sprouted form.
When you (soak and) sprout pulses, the complex legume protein is converted into simpler vegetable (imagine leaves on sprouts) protein.
It takes less vitality to digest these simpler proteins.
Both raw and cooked sprouts can be taken in moderate quantity.
